Creamy White Wine Chicken Mushroom Recipe

Ab iss raat me koi aur excitement mat dena…… Boring banado ji iss raat ko, please…” Do you remember the dialogue from a famous Bollywood movie, where the protagonist, fed up of an eventful night, prays to the Almighty to make it boring. With a hectic life and series of events (thankfully not damaging), I often relate to the dialogue. But wait! What is this! A single day when I can presume my day, I feel restless. I feel my life is paused, and it is not going to change. The thought of which literally gives me anxiety attack.

This is variety. Who does not want variety? Being it food, dress, service, we all enjoy varieties. We get bored with our own work if we do not receive and cannot offer varieties. And just like me, I believe everyone starts complaining to God, if God provides two or more days in similar pattern. Poor God! Sometimes I feel, we really torture him or her beyond limits.

Also, if you notice, this want of variety is actually a driving force behind learning and discovering new things. Thanks to the low tolerance for repeats, that pushes our finicky brain to search for something new, and thus making us wiser everyday.

And likewise, any other human brain, my brain too likes variety, even during cooking food. And interestingly the demand for variety is very much visible when I have to cook chicken. When it comes to chicken, I find it too difficult to repeat the recipes for which I myself and my family had licked fingers in the past. So hence my next adventure is this ‘Creamy White Wine Chicken Mushroom Recipe’, where the chicken pieces are fried till pink, baked for crispiness, and are then sunk in cream & white wine sauce along with sliced mushroom pieces.

Recipe: Creamy White Wine Chicken Mushroom Recipe

Preparation Time: Around 18 minutes Pre-heating Oven: Around 20 minutes Time Taken To Cook Chicken: 54 minutes + 20 minutes (in oven) Time Taken To Cook Mushroom & Chicken Together: 25 minutes Equipment Used: Bowls, pan, turner, knife, chopping board, oven, oven tray, aluminium foil, measuring cup and measuring spoon

Ingredients:

  • Around 1 kg chicken
  • 1 garlic
  • 200 gm mushroom
  • 3 tablespoon olive oil or refined oil or rice bran oil
  • 1 teaspoon salt
  • 200 ml cream
  • Little water
  • Very little white wine

Method:

  • Thaw the chicken in advance if they are frozen
  • Take out the cloves from garlic bulb, peel and chop them
  • Slice the mushroom
  • Wrap the oven tray in aluminium foil and pre-heat the oven
  • Heat a pan
  • Heat 2 tablespoon oil once the pan is hot
  • Sauté half of the chopped garlic once light smoke comes out from oil
  • Add the chicken pieces followed by ½ teaspoon salt, once the garlic pieces are sautéed
  • Cook the chicken pieces on medium flame till the liquid almost evaporates
  • Transfer the chicken pieces to an oven tray and bake the chicken pieces at 190O Celsius for 20 minutes
  • In the meantime, heat another tablespoon oil in the same pan and sauté the balance chopped garlic pieces
  • Add the sliced mushroom into the pan once the garlic pieces are sautéed, followed by ½ teaspoon salt
  • Pour the cream into the pan, once the mushroom pieces are cooked, followed by little water and very little white wine
  • Cook for 1-2 minutes till bubbles form
  • Transfer the baked chicken pieces into the pan
  • Cook for a minute and let the chicken pieces take the flavour of the cream
  • Switch off the flame and enjoy the dish
Chopped garlic

Peel and chop the garlic.

Sliced mushroom

Slice the mushroom.

Wrap the oven tray in aluminium foil and pre-heat the oven.

Heating oil in a pan

Heat 2 tablespoon oil in a pan.

Sautéing garlic

Sauté half of the chopped garlic.

Adding salt to chicken

Add the chicken pieces followed by ½ teaspoon salt.

Fried chicken pieces

Cook the chicken pieces till the liquid almost evaporates.

Transfer the chicken pieces to an oven tray and bake the chicken pieces at 190O Celsius for 20 minutes.

Sautéed garlic

In the meantime, heat another tablespoon oil in the same pan and sauté the balance chopped garlic pieces.

Add the sliced mushroom, followed by ½ teaspoon salt.

Adding white wine to cream

Pour the cream into the pan, followed by little water and very little white wine.

Cooking mushroom in white sauce

Cook for 1-2 minutes till bubbles form.

Crispy chicken pieces in white sauce

Transfer the baked chicken pieces into the pan.

Creamy White Wine Chicken Mushroom Recipe

Cook for a minute and let the chicken pieces take the flavour of the cream. Switch off the flame and enjoy the dish.

Tips:

  • In case you are using non-stick pan, heat the pan on low flame
  • You can skip the step of baking the chicken pieces in oven. However, baking will add crispiness to the chicken pieces
  • White wine adds extra flavour to the dish. However, you can still cook the dish without using white wine, if you are not comfortable with white wine
  • Set the temperature of oven as per your convenience, as temperature may differ model to model. The chicken pieces need to be little crispy
