Recipe: Paneer Egg Bhurji Or Scrambled Egg & Cottage Cheese Recipe

Preparation Time: 15 minutes (approx.) Cooking Time: 28 minutes (approx.) Equipment Used: A knife, a cutting board, a pan and a turner Yield: Serves 3-4

Ingredients:

  • 200 gm paneer or cottage cheese
  • ½ garlic or 15 cloves of garlic
  • 1 medium sized onion
  • 1 tomato
  • 2 green chillies
  • ½ cup chopped coriander leaves
  • 3 tablespoon refined oil
  • 1 teaspoon salt
  • ½ teaspoon turmeric powder
  • 3 eggs
  • ¼ teaspoon garam masala powder
  • 1.7 inch X 1.2 inch ginger
  • ¼ teaspoon sugar

Method:

  • Take out the paneer or cottage cheese few hours in advance if the paneer is refrigerated
  • Crumble the paneer and keep it aside
  • Chop the garlic cloves, onion, tomato and green chillies
  • Soak the coriander leaves in water and keep them aside
  • Heat a pan and heat oil in the pan once the pan is hot
  • Temper the oil with chopped garlic once the oil turns hot
  • Add chopped onion and fry the onion once the garlic pieces are sauteed
  • Once the onion pieces are fried or the onion pieces start turning golden brown, add chopped tomato and chopped green chillies
  • Mix the ingredients and add ½ teaspoon salt and ½ teaspoon turmeric powder
  • Add eggs one by one and mix each egg immediately after adding the same into the pan
  • Stir continuously till the eggs are completely fried and no gooeyness remain
  • Add the crumbled paneer and stir till the paneer pieces completely mix with the other ingredients
  • Add garam masala powder and grate the ginger piece into the bhurji
  • Taste and adjust salt. I have added ½ teaspoon salt alongwith ¼ teaspoon sugar
  • Switch off the flame and chop and spread coriander leaves on top of the dish
Paneer block

Take out the paneer or cottage cheese few hours in advance from refrigerator.

Crumbled paneer

Crumble the paneer. Chop and keep vegetables ready.

Heating oil in a non-stick pan

Heat oil.

Garlic sauteed

Temper the oil with chopped garlic.

Frying onion

Fry the onion.

Tomato with green chillies

Add chopped tomato and chopped green chillies.

Turmeric to vegetables

Add ½ teaspoon salt and ½ teaspoon turmeric powder.

Frying egg

Add eggs one by one and mix each egg immediately after adding the same into the pan.

Scrambled Egg

Stir continuously till the eggs are completely fried.

Crumbled paneer to egg bhurji

Add the crumbled paneer and stir till the paneer pieces mix with the other ingredients.

Adding garam masala into a dish

Add garam masala powder.

Grating ginger

Grate the ginger piece into the bhurji.

Adding salt to a dish

Taste and adjust salt.

Adding sugar

Add sugar.

Coriander leaves

Switch off the flame and chop and spread coriander leaves on top of the dish.

Tips:

  • Soak the coriander leaves in water way ahead of adding them into the dish, so that the leaves get rid of sand and dust particles
  • In case you are using non-stick pan, heat the pan on low flame
  • I prefer to cook the eggs first, so that the particles of egg can be tasted separately from paneer particles. But you can add paneer and egg together, or can add paneer before egg. The choice is yours
